Ground Chicken Meatballs with Mozzarella



All of these ground chicken meatballs taste great and are juicy. Each bite also has a surprise burst of melted mozzarella cheese. They're great for a quick dinner during the week or as a party appetizer.

Ingredients:

  • 1 lb ground chicken breast
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz mozzarella cheese, cut into small cubes
  • Marinara sauce for serving

Instructions:

Warm the oven up to 190C 375F

Put ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and black pepper in a large bowl

Mix the ingredients together until they are well mixed

Flatten a small piece of the mixture in your hand, then place a mozzarella cube in the middle and roll it into a ball, making sure the cheese is covered all the way around

The meatballs should be put on a baking sheet that has parchment paper on it

Place the meatballs in an oven that has already been heated up

Bake for 20 to 25 minutes, or until they are fully cooked and golden brown

Put marinara sauce on top and serve hot

Christmas Beef Roast



This delicious Christmas beef roast will wow your guests. It's tender and juicy, with garlic and fragrant herbs adding flavor. Served with a rich red wine gravy, it's the perfect main dish for your holiday feast.

Ingredients:

  • 1 beef roast about 3-4 pounds
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and black pepper to taste
  • 1 cup beef broth
  • 1/2 cup red wine
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

Instructions:

Turn on your oven and heat it up to 375F 190C

Cover the beef roast with olive oil, rosemary, thyme, salt, and pepper that has been chopped up

It's time to cook the roast

Put it in a roasting pan and add beef broth and red wine

Roast in an oven that has already been heated for about an hour and a half, or until the internal temperature reaches the level of doneness you want medium-rare is about 135F or 57C

Take the roast out of the oven and put it on a cutting board when it's done

Cover it with foil and wait 15 minutes

Get the gravy ready while the roast rests: Melt the butter in a saucepan over medium-low heat

Put in the flour and stir it in

Cook for two minutes or until it turns golden brown

Slowly whisk in the roast's juices, making sure to get rid of any browned bits as you go

Let the gravy cook for about 5 minutes, or until it gets thicker

Add pepper and salt to taste

Cut the beef roast into pieces and serve it with the warm gravy

Flourless Dark Chocolate Avocado Brownies



Indulge in these rich and fudgy flourless dark chocolate avocado brownies. The creamy avocado adds a delightful texture, while the dark chocolate creates an intense chocolate flavor. A perfect gluten-free and decadent treat!

Ingredients:

  • 2 ripe avocados
  • 200g dark chocolate 70% cocoa or higher, melted
  • 3/4 cup honey or maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped nuts walnuts, pecans, optional

Instructions:

Warm the oven up to 175F 350C and grease a baking dish

Cut the avocados in half, take out the pit, and scoop out the flesh into a bowl

To make the avocado smooth, mash it

Melt the dark chocolate and mix it with honey or maple syrup in a different bowl until the two are well mixed

The chocolate mix should be added to the mashed avocado and mixed well

Be sure to mix in the eggs and vanilla extract

Mix the baking soda, salt, and cocoa powder together

Add everything together and mix until it's smooth

If you want to, fold in the chopped nuts

Spread out the batter in the baking pan that has been greased

In a hot oven, bake for 20 to 25 minutes, or until a toothpick stuck in the middle comes out with a few moist crumbs on it

When you take the brownies out of the oven, let them cool down all the way before cutting them into squares
