Chewy Pumpkin Cookies That Are Not Cakey



These chewy pumpkin cookies are the perfect treat for fall. They have a delightful blend of pumpkin and warm spices, making them a cozy and satisfying snack.

Ingredients:

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup old-fashioned rolled oats
  • 1 cup raisins optional
  • 1/2 cup chopped walnuts optional

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet

The pumpkin puree, sugar, melted butter, egg, and vanilla extract should all be mixed together well in a large bowl

Mix the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves in a different bowl using a whisk

Slowly add the dry ingredients to the wet ones while stirring them together

Add the rolled oats, raisins if using, and chopped walnuts if using

Place spoonfuls of the cookie dough on the baking sheet that has been prepared, leaving space between each cookie

For 12 to 15 minutes, or until the edges are just beginning to turn golden

Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way

With milk or your favorite hot drink, the chewy pumpkin cookies are great
